Welcome to another
Monday of food ideas to hopefully inspire your cooking this week. We kept it
simple and filling around here this week.
Monday: Air Fried Chicken and Steamed
Green Beans
A busy Monday
called for an easy dinner, and this was it! I almost always have steamed green
bean packets in the freezer, and the air fryer takes care of chicken tenders in
no time.
Tuesday: Air Fried Chicken Thighs and
Cucumbers
Same song,
different verse. 😊 Ryan loves chicken thighs, so every now
and then, I throw those into the rotation. And I love fresh cucumbers with
ranch dressing!
Wednesday: Taco Salad
I browned ground
turkey and added taco seasoning and salsa. We ate it over spinach (me) and chips
(Ryan). I did crumble two (yes, just two) chips on top of mine for a little
extra fun.
Thursday: Subway
Truth? I
lost interest in cooking. So Ryan very sweetly brought home Subway for our
dinner. We are both hooked on the rotisserie chicken right now.
Friday: Chicken Tortilla Soup
We are coming
out of our protein reset and are cycling in some foods we’ve not had for a
while. I was so excited to make chicken tortilla soup! I didn’t think of it
until too late in the day to fully prepare it in the slow cooker, which would
have been much easier. So I boiled the chicken on the stove, shredded it in the
Kitchen Aid, and did the rest in a pot on the stovetop. Tasted great anyway!
Saturday: Grilled Steaks and Steamed Green
Beans
Ryan was
home and the weather was nice, so we were able to grill out! So yummy – and made
enough for leftovers for the next day!
Sunday:
Leftover Grilled Steaks and Steamed Green Beans
It felt appropriate for our engagementversary!
